Marinated Flank Steak

Who doesn't love a deliciously cooked steak? This marinated flank steak is a real crowd pleaser and if you are trying to get the whole family to eat the same meal, this usually does the trick! Just remember to adjust the recipe if you're cooking for more people!

For best results, marinate the meat for several hours in advance and leave it out at room temperature.

**Note that flank steak is usually grilled. Grilling is ok once in a while, but there are many undesirable chemicals that come with it. A healthier alternative is to sear and bake the flank steak instead.

Flank steak 2 lbs
Red wine vinegar 2 cups
Beef broth 1 cup
Worcestershire sauce 2 tbsp
Extra virgin olive oil 1 cup
Ghee 8 tbsp
Garlic cloves 8
Rosemary sprigs 10
Coriander seeds 2 tbsp
Fennel seeds 2 tbsp
Pepper 2 tsp
Himalayan salt 2 tsp

How to Make:

  1. Heat the oven to 275 degrees.
  2. Toast the coriander, fennel and rosemary (or bay leaves) in a small skillet over medium-high heat. Stir occasionally until fragrant (2-3 minutes) then crush in a bowl and transfer to a baking dish.
  3. Add the beef broth, vinegar, Worcestershire sauce, garlic, rosemary and olive oil. Whisk together to combine.
  4. Poke the flank steak all over, top and bottom, and spoon the marinade all over. At this point you can cut the steak in half and marinate the remainder overnight.
  5. Slather the steak in ghee and sear over medium-high heat for 2-3 minutes per side.
  6. Transfer the steak back to the baking dish and add any lost juices.
  7. Bake for 25-30 minutes, depending on how well cooked you like your meat. You may want to keep adding the juices to keep the steak nice and moist.
  8. Remove from the oven and cut into strips. It can be eaten alone or with a side of caulimash for a delicious meal!
